Part of the reason for the spike is what’s called the Foehn effect, which is the movement of air from the wet and cold side of a mountain to warmer drier conditions on the other side.

A new provisional record for the highest maximum temperature (19.6ºC) on a January day in the UK has been recorded in Southern Scotland, at Kinlochewe village in Wester Ross, in the highlands.
