Executive Chef Diogo Pereira, who is from the local area, has embraced the theme of the Portuguese Discoveries to take diners back in time, while respecting local traditions.

“Natural flavours work best. Working with fresh flavours and creating new menus that challenge the taste buds is our greatest challenge,” said Chef Diogo Pereira, adding “We are always looking to surprise while respecting the traditions of the Algarve”.

A proud Algarvian, Chef Pereira fell in love with the aromas and tastes of the world. After completing his course in Cooking and Pastry at the Algarve School of Hotel and Tourism and various internships in national and international hotels, Diogo Pereira began his career at 9 IRON Restaurant, later becoming Chef de Cozinha for several restaurants and hotel chains in the Algarve.

In 2007 he was called up by the Portuguese Football Federation for the national Under-21 football team, not for his football skills, but to coordinate and supervise the food for the team. Several years later he became a trainer at the Algarve School of Hotels and Tourism and then went to work in Venezuela as a Chef de Consultant. He returned to the Algarve in 2013 as Executive Sub-Chef at Sheraton Pine Cliffs before embracing the challenge of leading the Cascade Wellness Resort cuisine in 2016.
